JIRO DREAMS OF SUSHI ::
”I do the same thing over and over, improving bit by bit. There is always a yearning to achieve more. I’ll continue to climb, trying to reach the top, but no one knows where the top is.” Jiro Ono
This film was deeply inspiring. Jiro, 86, is so committed and loves his work to his core. He’s the head chef and owner of Sukiyabashi Jiro, a 10 seat restuarant in a subway station. This tiny restaurant has 3 Michelin stars. 3. The menu consists of beer, sake and 1 food item: sushi. It’s a chef’s course of 20 pieces of sushi for 30,000 yen, (about 350 US dollars), and jesus, it looks worth it. It’s unreal watching someone create food with such precision and knowledge; and the sushi, it’s… it’s so simple and beautiful, it made me think, “I’ve been eating tripe, haven’t I?” Yep.
